Ingredients
- 2 (5-6 ounce) boneless, skinless chicken breasts
- 2 large eggs
- 2 tablespoons milk (non-dairy works too)
- 1 cup breadcrumbs (gluten-free can be used)
- 1/4 cup shredded parmesan cheese
- 1 tablespoon Italian seasoning
- 2 teaspoons garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Olive oil cooking spray
Instructions
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Slice each chicken breast in half lengthwise and pound into 1/4 inch thick cutlets.
- In a medium shallow dish, whisk the eggs with milk, adding a pinch of salt and pepper.
- In a separate shallow dish, combine breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper.
- Dip each chicken cutlet into the egg mixture, then coat with the breadcrumb mixture, pressing down to adhere.
- Place the coated chicken on the baking sheet in a single layer, ensuring they do not overlap.
- Spray each cutlet with olive oil cooking spray.
- Bake for 17-20 minutes, flipping halfway, until the internal temperature reaches 165 degrees F.
Notes
For a variation, try adding different cheeses or herbs to the breadcrumb mixture. Ensure cutlets are spaced properly on the baking sheet for even cooking.
