Ingredients

  • 2 (5-6 ounce) boneless, skinless chicken breasts
  • 2 large eggs
  • 2 tablespoons milk (non-dairy works too)
  • 1 cup breadcrumbs (gluten-free can be used)
  • 1/4 cup shredded parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil cooking spray


Instructions

  1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Slice each chicken breast in half lengthwise and pound into 1/4 inch thick cutlets.
  3. In a medium shallow dish, whisk the eggs with milk, adding a pinch of salt and pepper.
  4. In a separate shallow dish, combine breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper.
  5. Dip each chicken cutlet into the egg mixture, then coat with the breadcrumb mixture, pressing down to adhere.
  6. Place the coated chicken on the baking sheet in a single layer, ensuring they do not overlap.
  7. Spray each cutlet with olive oil cooking spray.
  8. Bake for 17-20 minutes, flipping halfway, until the internal temperature reaches 165 degrees F.

Notes

For a variation, try adding different cheeses or herbs to the breadcrumb mixture. Ensure cutlets are spaced properly on the baking sheet for even cooking.
