Ingredients
- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup Parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season the chicken breasts on both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Once hot, carefully add the chicken.
- Cook the chicken for 5-6 minutes on each side, or until golden and crispy.
- Remove the chicken from the skillet and set aside.
- Lower the heat and add minced garlic to the pan. Sauté for about 30 seconds until fragrant.
- Pour the cream into the skillet, stirring continuously to combine with the garlic.
- Add Italian seasoning and Parmesan cheese, mixing until the sauce becomes smooth.
- If desired, stir in chopped spinach and simmer for 2-3 minutes.
- Return the cooked chicken to the pan, spooning the sauce over the top.
- Allow to simmer for 1 minute, then remove from heat.
Notes
Use freshly grated Parmesan for best flavor. Try adding sun-dried tomatoes or mushrooms for more color and flavor.
