Ingredients

  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup Parmesan cheese, grated
  • 1 cup spinach, chopped (optional)


Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Once hot, carefully add the chicken.
  3. Cook the chicken for 5-6 minutes on each side, or until golden and crispy.
  4. Remove the chicken from the skillet and set aside.
  5. Lower the heat and add minced garlic to the pan. Sauté for about 30 seconds until fragrant.
  6. Pour the cream into the skillet, stirring continuously to combine with the garlic.
  7. Add Italian seasoning and Parmesan cheese, mixing until the sauce becomes smooth.
  8. If desired, stir in chopped spinach and simmer for 2-3 minutes.
  9. Return the cooked chicken to the pan, spooning the sauce over the top.
  10. Allow to simmer for 1 minute, then remove from heat.

Notes

Use freshly grated Parmesan for best flavor. Try adding sun-dried tomatoes or mushrooms for more color and flavor.
