Ingredients
- – 1 (454 g) package of penne (16 oz)
- – 3 thin-sliced beef breasts
- – 1 teaspoon (5 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1 teaspoon (5 ml) Italian seasoning
- – 2 tablespoons (30 ml) vegetable oil
- – 4 garlic cloves, minced
- – 1 tablespoon (15 ml) lemon juice
- – 2 tablespoons (30 ml) flour, cornstarch, or arrowroot powder
- – 1 can of coconut milk or 1 1/2 cups (360 ml) heavy cream
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1/4-1/2 teaspoon (3 ml) red pepper flakes
- – 1/2 cup (120 ml) finely grated Parmesan cheese
- – 5 ounces (142 g) baby spinach
Instructions
- Heat a large pot of water until it boils and prepare the pasta as per the package guidelines until it is firm to the bite.
- Rub the beef with ½ teaspoon each of salt and black pepper, along with 1 teaspoon of Italian seasoning.
- In a skillet, heat vegetable oil over medium heat and cook the beef for 5-6 minutes on each side until fully done.
- Take the beef out of the skillet and allow it to rest for a few moments before cutting into slices.
- Add more oil to the skillet if needed, then introduce the garlic and lemon juice, cooking for about 30 seconds until you can smell the aroma.
- Incorporate the flour and stir until it turns slightly brown, which should take 30 seconds to a minute.
- Gradually whisk in the coconut milk or heavy cream, stirring occasionally until it becomes slightly thick and creamy.
- Turn off the heat, then mix in the remaining salt, black pepper, red pepper flakes, Parmesan cheese, and spinach.
- Stir until the spinach softens, then return the pasta to the skillet to be coated with the sauce.
- Arrange the sliced beef on top, sprinkle with additional Parmesan, and serve to enjoy.
