Ingredients

  • – 500 g / 1 lb chicken breast (2 pieces)
  • – 1 egg
  • – 1 garlic clove, minced (optional)
  • – Salt and pepper
  • – 125 g / 4 oz / 1 1/4 cups shredded mozzarella
  • – 2 tbsp (30 ml) vegetable oil
  • – 1 tbsp (15 ml) olive oil


Instructions

  1. Slice each chicken breast horizontally to create four fillets. If they are thicker than 1.75 cm / 3/4″, gently flatten them.
  2. In a bowl, combine the egg, minced garlic (if using), and a pinch of salt and pepper. Beat with a fork until well mixed.
  3. Pour the shredded mozzarella into a shallow dish.
  4. Dip the chicken pieces into the egg mixture, then place them in the mozzarella with the cut side facing down. Press firmly, flip, and ensure both sides are well coated with the cheese. Shake off any excess. Repeat with the remaining chicken pieces.
  5. In a large frying pan, heat the vegetable oil and olive oil over high heat.
  6. Carefully place the chicken in the non-stick or well-seasoned cast iron pan. Avoid moving the chicken to allow the cheese to adhere and become crispy.
  7. Gently press down with a spatula. Peek underneath and turn with tongs when the underside is a rich golden color, which should take about 3 minutes.
  8. Cook the opposite side for another 3 minutes until it achieves a deep golden hue and becomes crispy. Again, avoid moving the chicken until it reaches this stage. Lightly press with a spatula and ensure the total cooking time does not exceed 6 minutes to keep the chicken juicy.
  9. Serve right away! I paired mine with lemon slices, cauliflower mash, and a fennel slaw with yogurt dressing.
