Description

A quick and flavorful recipe featuring crispy tostada shells topped with warm, shredded rotisserie chicken and fresh ingredients.


Ingredients

  • 4 tostada shells
  • 2 cups shredded rotisserie chicken
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • Chopped cilantro (optional)
  • Lime wedges (for serving)


Instructions

  1. Preheat your oven to 400°F (200°C). Place the tostada shells on a baking sheet and warm them in the oven for about 5 minutes until crispy.
  2. Heat the refried beans in a small saucepan over medium heat until warm.
  3. Assemble the tostadas by spreading a layer of refried beans on each tostada shell.
  4. Top with shredded rotisserie chicken, followed by shredded lettuce and diced tomatoes.
  5. Sprinkle shredded cheese over the top.
  6. Return the assembled tostadas to the oven for an additional 5 minutes to melt the cheese.
  7. Serve warm, drizzling with salsa and sour cream, and garnish with chopped cilantro and lime wedges.

Notes

For a vegetarian version, replace the chicken with sautéed vegetables or black beans.
