Ingredients
- 4 tostada shells
- 2 cups shredded rotisserie chicken
- 1 cup refried beans
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup salsa
- 1/4 cup sour cream
- Chopped cilantro (optional)
- Lime wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C). Place the tostada shells on a baking sheet and warm them in the oven for about 5 minutes until crispy.
- Heat the refried beans in a small saucepan over medium heat until warm.
- Assemble the tostadas by spreading a layer of refried beans on each tostada shell.
- Top with shredded rotisserie chicken, followed by shredded lettuce and diced tomatoes.
- Sprinkle shredded cheese over the top.
- Return the assembled tostadas to the oven for an additional 5 minutes to melt the cheese.
- Serve warm, drizzling with salsa and sour cream, and garnish with chopped cilantro and lime wedges.
Notes
For a vegetarian version, replace the chicken with sautéed vegetables or black beans.
