Description

A comforting and hearty chicken pot pie made effortlessly in a crock pot, combining tender chicken, vegetables, and a flaky crust.

Ingredients

  • 1 lb chicken breast (boneless, skinless)
  • 1 can cream of chicken soup
  • 1 cup frozen mixed vegetables
  • 1 cup chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Place the chicken breasts at the bottom of your crock pot.
  2. Pour in the cream of chicken soup, followed by the frozen mixed vegetables and chicken broth.
  3. Sprinkle in the onion powder, garlic powder, thyme, salt, and pepper.
  4. Stir gently to combine all the ingredients, ensuring the chicken is well coated.
  5. Set your crock pot to cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, tear the pie crust into pieces and stir them on top of the filling.
  7. Cover the pot and continue cooking until the crust is golden and the filling is bubbly.
  8. Serve warm and enjoy!

Notes

For best results, use high-quality chicken broth and feel free to customize your vegetable mix. If the crust isn’t browning, consider briefly transferring it to the oven to finish.
