A comforting and hearty chicken pot pie made effortlessly in a crock pot, combining tender chicken, vegetables, and a flaky crust.
Ingredients
- 1 lb chicken breast (boneless, skinless)
- 1 can cream of chicken soup
- 1 cup frozen mixed vegetables
- 1 cup chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp thyme
- Salt and pepper to taste
- 1 pie crust (store-bought or homemade)
Instructions
- Place the chicken breasts at the bottom of your crock pot.
- Pour in the cream of chicken soup, followed by the frozen mixed vegetables and chicken broth.
- Sprinkle in the onion powder, garlic powder, thyme, salt, and pepper.
- Stir gently to combine all the ingredients, ensuring the chicken is well coated.
- Set your crock pot to cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, tear the pie crust into pieces and stir them on top of the filling.
- Cover the pot and continue cooking until the crust is golden and the filling is bubbly.
- Serve warm and enjoy!

For best results, use high-quality chicken broth and feel free to customize your vegetable mix. If the crust isn’t browning, consider briefly transferring it to the oven to finish.
