This creamy Cajun chicken pasta is a flavorful and comforting dish perfect for busy weeknights, featuring chicken, peppers, and a rich creamy sauce.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese for serving
  • Crushed red pepper flakes for added heat


Instructions

  1. Rub the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper.
  2. Optional: Marinate the chicken in the fridge for 15-20 minutes.
  3. Place the seasoned chicken into the slow cooker.
  4. Add the sliced bell peppers, sliced onion, and low-sodium chicken broth.
  5. Set the slow cooker to low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and return it to the slow cooker.
  7. Add cream cheese and shredded Parmesan, stirring until the cheeses meld into a creamy sauce.
  8. Cook on low for an additional 10-15 minutes.
  9. Meanwhile, boil pasta according to package directions until al dente; drain.
  10. Stir the cooked pasta into the creamy Cajun chicken mixture.
