Description

A warm and hearty Crock Pot Hamburger Soup that combines ground beef and fresh vegetables for a comforting meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups frozen mixed vegetables
  • 1 cup pasta (optional)


Instructions

  1. In a skillet, brown the ground beef with the chopped onion until cooked through. Drain excess fat.
  2. Transfer the beef mixture to a crock pot.
  3. Add carrots, celery, garlic, beef broth, diced tomatoes, kidney beans, Italian seasoning, salt, and pepper.
  4. Stir to combine and cover the crock pot.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, add the frozen mixed vegetables and pasta if using.
  7. Stir and let cook until the vegetables are heated through and pasta is tender.
  8. Serve warm.

Notes

For a thicker soup, consider adding a slurry of cornstarch and water towards the end of cooking.
