Description
A warm and hearty Crock Pot Hamburger Soup that combines ground beef and fresh vegetables for a comforting meal.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups frozen mixed vegetables
- 1 cup pasta (optional)
Instructions
- In a skillet, brown the ground beef with the chopped onion until cooked through. Drain excess fat.
- Transfer the beef mixture to a crock pot.
- Add carrots, celery, garlic, beef broth, diced tomatoes, kidney beans, Italian seasoning, salt, and pepper.
- Stir to combine and cover the crock pot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the frozen mixed vegetables and pasta if using.
- Stir and let cook until the vegetables are heated through and pasta is tender.
- Serve warm.
Notes
For a thicker soup, consider adding a slurry of cornstarch and water towards the end of cooking.
