Ingredients
- 1 lb chicken, diced
- 1 lb andouille sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cups chicken broth
- 1 can diced tomatoes
- 2 cups rice
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In your Crock Pot, combine the diced chicken, sliced andouille sausage, chopped onion, bell pepper, and celery.
- Pour in the chicken broth and add the can of diced tomatoes.
- Stir in the rice, Cajun seasoning, salt, and pepper, ensuring all components blend well.
- Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, serve hot and garnish with green onions.
