A hearty and comforting stew made with creamy butter beans and tender okra, perfect for busy weeknight dinners.
Ingredients
- 2 (12 oz) bags Frozen Okra
- 28 oz Frozen Butter Beans
- 1/2 lb Bacon, chopped
- 1 Yellow Onion, chopped
- 1 Green Bell Pepper, chopped
- 2 cups Vegetable Broth
- 3 tbsp Butter
- 1 tbsp Cajun Seasonings
- 1 tbsp Garlic Powder
- Cooked White Rice for Serving
Instructions
- Chop bacon, onion, and green bell pepper.
- Add all the ingredients to the crockpot, starting with the frozen okra and butter beans.
- Pour the vegetable broth over the layers.
- Add butter and sprinkle with Cajun seasonings and garlic powder.
- Stir to ensure even distribution of all ingredients.
- Cover and cook on low for at least 5 hours.
- Serve over cooked white rice. Enjoy your hearty stew!
Notes
For a thicker stew, mash a portion of the beans after cooking. Adjust seasoning to taste.
