Ingredients
- 4 chicken breasts
- 2 cups sweet corn (canned or frozen)
- 1 onion, chopped
- 3 cups chicken broth
- 2 cups heavy cream or milk
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- Optional: crispy bacon, shredded cheese, or sour cream
Instructions
- In a crockpot, combine chicken breasts, sweet corn, onion, chicken broth, garlic, salt, pepper, and thyme.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
- Remove chicken, shred it, and return to the crockpot.
- Stir in heavy cream or milk and let cook for an additional 30 minutes.
- Serve hot, topped with crispy bacon, shredded cheese, or a dollop of sour cream if desired.
Notes
For a thicker consistency, mix cornstarch with water and stir it in during the last cooking phase. Customize with different vegetables or herbs to enhance flavor.
