Description

A comforting and creamy chowder made with chicken, sweet corn, and fragrant herbs, perfect for cozy gatherings or busy weeknights.


Ingredients

  • 4 chicken breasts
  • 2 cups sweet corn (canned or frozen)
  • 1 onion, chopped
  • 3 cups chicken broth
  • 2 cups heavy cream or milk
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • Optional: crispy bacon, shredded cheese, or sour cream


Instructions

  1. In a crockpot, combine chicken breasts, sweet corn, onion, chicken broth, garlic, salt, pepper, and thyme.
  2. Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  3. Remove chicken, shred it, and return to the crockpot.
  4. Stir in heavy cream or milk and let cook for an additional 30 minutes.
  5. Serve hot, topped with crispy bacon, shredded cheese, or a dollop of sour cream if desired.

Notes

For a thicker consistency, mix cornstarch with water and stir it in during the last cooking phase. Customize with different vegetables or herbs to enhance flavor.
