A comforting and creamy chicken corn chowder made easily in a slow cooker, perfect for busy families.
Ingredients
- 1 lb chicken breast, diced
- 4 cups corn (fresh or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- Crispy bacon, for topping
- Shredded cheese, for topping
- Sour cream, for topping
Instructions
- In your slow cooker, combine the diced chicken, corn, onion, garlic, chicken broth, salt, pepper, and thyme. Stir gently to mix the ingredients evenly.
- Cover your crockpot and choose the low cooking setting, cooking for 6-7 hours, or opt for high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream.
- Serve hot, garnished with crispy bacon, shredded cheese, and a dollop of sour cream.
Notes
For a thicker chowder, mash some corn with a fork during cooking. Use fresh corn in season for a sweeter flavor.
