Description

A comforting and creamy chicken corn chowder made easily in a slow cooker, perfect for busy families.


Ingredients

  • 1 lb chicken breast, diced
  • 4 cups corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • Crispy bacon, for topping
  • Shredded cheese, for topping
  • Sour cream, for topping


Instructions

  1. In your slow cooker, combine the diced chicken, corn, onion, garlic, chicken broth, salt, pepper, and thyme. Stir gently to mix the ingredients evenly.
  2. Cover your crockpot and choose the low cooking setting, cooking for 6-7 hours, or opt for high for 3-4 hours.
  3. About 30 minutes before serving, stir in the heavy cream.
  4. Serve hot, garnished with crispy bacon, shredded cheese, and a dollop of sour cream.

Notes

For a thicker chowder, mash some corn with a fork during cooking. Use fresh corn in season for a sweeter flavor.
