A delightful and comforting dish combining tender chicken with creamy coconut milk and aromatic spices, cooked effortlessly in a crockpot.
Ingredients
- 2 lbs chicken breasts
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon ginger, grated
- 1 tablespoon soy sauce
- Salt and pepper, to taste
- Optional: bell peppers, carrots, peas
Instructions
- In a crockpot, add the chicken breasts.
- In a bowl, mix together coconut milk, curry powder, chopped onion, minced garlic, chicken broth, grated ginger, soy sauce, salt, and pepper.
- Pour the mixture over the chicken in the crockpot.
- If desired, add vegetables of your choice.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and stir it into the sauce.
Notes
Customize the spice level with chili powder or fresh chilies. Using frozen vegetables can save time. Allowing the dish to rest before serving enhances flavors.
