Description

A flavorful and easy dish that combines creamy coconut milk with zesty lime and tender chicken, perfect for a tropical-inspired meal.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (14 oz) can coconut milk (full fat or light)
  • Zest and juice of 2 limes
  • 3 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro (plus more for garnish)


Instructions

  1. Place the chicken in the crockpot.
  2. Whisk together the coconut milk, lime zest and juice, garlic, honey, cumin, salt, and pepper in a bowl.
  3. Pour the mixture over the chicken.
  4. Cover and cook on LOW for 300–360 minutes or HIGH for 150–180 minutes.
  5. Stir in cilantro before serving. Serve over rice and garnish with extra cilantro.

Notes

For added flavor, consider searing the chicken before placing it in the crockpot. Adjust the honey for sweetness per your preference.
