A comforting and creamy chicken chili made effortlessly in a crockpot, perfect for busy days.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 8 oz cream cheese
- 1 packet taco seasoning
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the black beans, corn, and diced tomatoes to the pot.
- Pour the chicken broth over the mixture, ensuring everything is well distributed.
- Sprinkle the taco seasoning on top.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before you’re ready to serve, add the cream cheese to the crockpot.
- Shred the chicken with two forks and stir everything until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with cilantro if desired.
