Description

A comforting and creamy chicken chili made effortlessly in a crockpot, perfect for busy days.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 8 oz cream cheese
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the black beans, corn, and diced tomatoes to the pot.
  3. Pour the chicken broth over the mixture, ensuring everything is well distributed.
  4. Sprinkle the taco seasoning on top.
  5. Cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before you’re ready to serve, add the cream cheese to the crockpot.
  7. Shred the chicken with two forks and stir everything until well combined.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with cilantro if desired.
