A comforting, creamy soup made with ground beef, potatoes, and heavy cream, perfect for chilly evenings.
Ingredients
- 4 large potatoes, peeled and diced
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: shredded cheese and green onions for topping
Instructions
- In a skillet, brown the ground beef with the diced onion and minced garlic over medium heat until fully cooked.
- Drain any excess fat and transfer the mixture to your crockpot.
- Add the diced potatoes and pour in the beef broth.
- Season with salt and pepper, adjusting to taste.
- Set the crockpot to low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- About 15 minutes before serving, stir in the heavy cream.
- Garnish with shredded cheese and green onions before serving if desired.
Notes
For a creamier consistency, use a potato masher to break down some of the potatoes while cooking.
