Description

A comforting, creamy soup made with ground beef, potatoes, and heavy cream, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: shredded cheese and green onions for topping


Instructions

  1. In a skillet, brown the ground beef with the diced onion and minced garlic over medium heat until fully cooked.
  2. Drain any excess fat and transfer the mixture to your crockpot.
  3. Add the diced potatoes and pour in the beef broth.
  4. Season with salt and pepper, adjusting to taste.
  5. Set the crockpot to low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  6. About 15 minutes before serving, stir in the heavy cream.
  7. Garnish with shredded cheese and green onions before serving if desired.

Notes

For a creamier consistency, use a potato masher to break down some of the potatoes while cooking.
