A tropical-inspired meal featuring tender chicken cooked in a savory sauce with pineapple and soy sauce, perfect for busy weeknights.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 red bell pepper, sliced
- 1 onion, sliced
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix together pineapple, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Pour the mixture over the chicken in the crockpot.
- Add sliced bell pepper and onion on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and stir it back into the sauce before serving.
- Serve over rice or with a side of vegetables.
Notes
For added spice, consider adding red chili flakes or hot sauce. If a thicker sauce is desired, simmer the sauce after removing the chicken.
