Description

A tropical-inspired meal featuring tender chicken cooked in a savory sauce with pineapple and soy sauce, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix together pineapple, soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Pour the mixture over the chicken in the crockpot.
  4. Add sliced bell pepper and onion on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken and stir it back into the sauce before serving.
  7. Serve over rice or with a side of vegetables.

Notes

For added spice, consider adding red chili flakes or hot sauce. If a thicker sauce is desired, simmer the sauce after removing the chicken.
