Description

A tender and flavorful whole chicken cooked in a slow cooker, infused with garlic, paprika, and lemon.


Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 lemon (halved)
  • Fresh herbs (optional, such as rosemary or thyme)


Instructions

  1. Pat the chicken dry with paper towels and rub olive oil all over it.
  2. Mix salt, black pepper, garlic powder, onion powder, and paprika in a bowl and season the chicken inside and out.
  3. Stuff the cavity of the chicken with the halved lemon and fresh herbs.
  4. Place the seasoned chicken in the slow cooker, breast side up, and cover.
  5. Set the slow cooker to cook on low for 6-8 hours, or until the internal temperature reaches 165°F (75°C).
  6. Carefully remove the chicken from the slow cooker and let it rest for a few minutes before carving.

Notes

For crispier skin, finish the chicken under a broiler for a few minutes after cooking.
