Ingredients
- 4 large flour tortillas
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can mild green chilies (4 oz)
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Cooking spray or olive oil
Instructions
- In a bowl, combine the shredded chicken, cheese, green chilies, sour cream, chili powder, and cumin. Mix until well combined.
- Place a tortilla on a flat surface and spoon about 1/2 cup of the chicken mixture onto the center.
- Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
- Repeat with the remaining tortillas and filling.
- Place the chimichangas seam-side down on a baking sheet coated with cooking spray or olive oil.
- Lightly spray the tops with cooking spray.
- Bake for 25-30 minutes, or until golden brown and crispy.
- Serve with your favorite toppings like salsa or guacamole.
