Description

Crispy chicken chimichangas filled with shredded chicken, cheese, and zesty green chilies, baked to golden perfection for a healthy and delicious meal.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can mild green chilies (4 oz)
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Cooking spray or olive oil


Instructions

  1. In a bowl, combine the shredded chicken, cheese, green chilies, sour cream, chili powder, and cumin. Mix until well combined.
  2. Place a tortilla on a flat surface and spoon about 1/2 cup of the chicken mixture onto the center.
  3. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
  4. Repeat with the remaining tortillas and filling.
  5. Place the chimichangas seam-side down on a baking sheet coated with cooking spray or olive oil.
  6. Lightly spray the tops with cooking spray.
  7. Bake for 25-30 minutes, or until golden brown and crispy.
