A comforting chicken zucchini bake with tender chicken breasts and zucchini topped with melted cheddar cheese.
Ingredients
- 1 lb boneless skinless chicken breasts
- 2 medium zucchini, sliced into rounds
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F.
- Slice the zucchini into even rounds, about 1/4 inch thick.
- In a large bowl, mix the sliced zucchini with olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss until well coated.
- Place the seasoned zucchini in a greased baking dish. Arrange the chicken breasts on top.
- Sprinkle the shredded cheddar cheese generously over the chicken and zucchini.
- Bake for 30-35 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.
- Remove from the oven and let it sit for 5 minutes before serving.
