A comforting Southern dish featuring tender chicken thighs and drumsticks in a rich, creamy sauce.
Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 1 cup all-purpose flour (substitute with gluten-free flour if desired)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream (optional)
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon thyme
Instructions
- Season the chicken pieces generously with salt, pepper, and paprika. Dredge the chicken in flour, shaking off any excess flour.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken pieces to the skillet and brown them on all sides, about 8-10 minutes.
- After browning the chicken, remove it from the skillet and set aside. In the same skillet, add the chopped onion and garlic. Sauté until softened, about 3-4 minutes.
- Slowly stir in the chicken broth and heavy cream if using. Scrape the bottom of the skillet to deglaze.
- Return the browned chicken to the skillet. Cover and let simmer for 30-40 minutes until the chicken is cooked through (165°F or 75°C).
- Taste and adjust seasoning as needed before serving.
Notes
Pat the chicken dry before seasoning for better adhesion. Adjust the sauce’s thickness by simmering uncovered. Garnish with fresh herbs for added color.
