A simple and flavorful one-dish meal featuring tender chicken, savory rice, and a refreshing tzatziki sauce, perfect for busy weeknights.
Ingredients
- 2 cups long grain white rice
- 4 cups chicken broth
- 2 pieces boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup Greek yogurt
- 2 cloves minced garlic
- 1 cup grated cucumber
- 2 tablespoons dill
- 2 tablespoons lemon juice
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 cup diced zucchini or bell pepper for topping
Instructions
- Preheat your oven to 375°F and grease a large baking dish.
- Rinse the rice until the water runs clear.
- Combine the rice, chicken broth, salt, and black pepper in the greased baking dish.
- Place the chicken breasts on top of the rice mixture and drizzle with olive oil.
- Sprinkle paprika and oregano over the chicken.
- Cover the baking dish with foil and bake for 30 minutes.
- Meanwhile, prepare the tzatziki sauce by combining Greek yogurt, minced garlic, grated cucumber, dill, and lemon juice in a bowl.
- Stir well and season with salt and pepper to taste.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through.
- Let cool before serving.
- Scoop chicken and rice into bowls and drizzle with tzatziki sauce.
Notes
For added flavor, consider marinating the chicken beforehand.
