Description

A simple and flavorful one-dish meal featuring tender chicken, savory rice, and a refreshing tzatziki sauce, perfect for busy weeknights.


Ingredients

  • 2 cups long grain white rice
  • 4 cups chicken broth
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup Greek yogurt
  • 2 cloves minced garlic
  • 1 cup grated cucumber
  • 2 tablespoons dill
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 cup diced zucchini or bell pepper for topping


Instructions

  1. Preheat your oven to 375°F and grease a large baking dish.
  2. Rinse the rice until the water runs clear.
  3. Combine the rice, chicken broth, salt, and black pepper in the greased baking dish.
  4. Place the chicken breasts on top of the rice mixture and drizzle with olive oil.
  5. Sprinkle paprika and oregano over the chicken.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Meanwhile, prepare the tzatziki sauce by combining Greek yogurt, minced garlic, grated cucumber, dill, and lemon juice in a bowl.
  8. Stir well and season with salt and pepper to taste.
  9. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through.
  10. Let cool before serving.
  11. Scoop chicken and rice into bowls and drizzle with tzatziki sauce.

Notes

For added flavor, consider marinating the chicken beforehand.
