A simple and delicious teriyaki chicken recipe made in a slow cooker, perfect for busy families.
Ingredients
- 2 lbs boneless skinless chicken breasts or thighs
- 1/2 cup low-sodium soy sauce
- 1/2 cup water
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 2 cups broccoli florets (optional)
- 1 cup diced pineapple (optional)
- Sesame seeds for garnish (optional)
- Sliced green onions for garnish (optional)
- 4 cups cooked rice for serving
Instructions
- Place the chicken in the slow cooker.
- In a medium mixing bowl, whisk together the soy sauce, water, brown sugar, garlic, ginger, rice vinegar, sesame oil, and black pepper.
- Pour the sauce over the chicken, ensuring each piece is coated.
- Cover the slow cooker and set it on LOW for 4-5 hours or HIGH for 2-3 hours.
- When the cooking time is up, shred the chicken using two forks.
- In a small bowl, whisk the cornstarch and cold water until smooth, then stir this mixture into the sauce in the crockpot.
- If using broccoli or pineapple, add them now and turn the heat to HIGH for 15 minutes to thicken the sauce.
- Return the shredded chicken to the pot and stir to coat.
- Serve over cooked rice, garnished with sesame seeds and sliced green onions if desired.
Notes
For added heat, consider incorporating red pepper flakes into the sauce. Experiment with different vegetables for variation.
