Ingredients
- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the long grain white rice, chicken broth, salt, and black pepper in a large baking dish.
- Place the boneless chicken breasts on top of the rice mixture. Drizzle olive oil over the chicken.
- Cover the dish with aluminum foil.
- Bake for about 30-35 minutes or until the chicken is cooked through and the rice is tender.
- Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and paprika in a bowl.
- Remove the dish from the oven, let it rest, and fluff the rice before serving with tzatziki sauce.
Notes
For deeper flavor, marinate the chicken in olive oil and spices overnight. Use high-quality chicken broth for an enhanced taste.
