- 8 pieces chicken thighs (bone-in, skin-on)

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Pat the chicken thighs dry with paper towels.
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Drizzle olive oil over the chicken thighs, rubbing it in thoroughly.
- In a bowl, combine garlic powder, onion powder, paprika, thyme, rosemary, salt, black pepper, and smoked paprika.
- Sprinkle the spice mixture over both sides of the thighs, pressing gently to adhere.
- Place the thighs skin-side up on the baking sheet with space between each piece.
- Bake for 35-40 minutes, until internal temperature reaches 165°F and skin is golden brown.
- Let the chicken rest for 5 minutes before serving.
