A simple and flavorful recipe for baked boneless skinless chicken thighs that are juicy and tender.


Ingredients

  • 2 pounds boneless skinless chicken thighs (about 8 pieces)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder


Instructions

  1. Preheat your oven to 400°F.
  2. Brush a baking sheet with 1 tablespoon of olive oil.
  3. Arrange the chicken thighs on the baking sheet, ensuring there’s space between each piece.
  4. Drizzle the remaining olive oil over the chicken.
  5. Bake the thighs for 18 minutes, flip them, and then bake for an additional 14 minutes.
  6. Check the internal temperature at the thickest part of the thigh with a meat thermometer; it should reach 175°F.
  7. Once done, tent with foil and let rest for 3 minutes before serving.

Notes

For added crispiness, turn on the broiler for the last minute of baking.
