Delicious and crispy baked tacos filled with flavorful shredded chicken and spices, perfect for family gatherings.
Ingredients
- 2 1/2 cups shredded chicken
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chipotle chili powder (optional)
- 1/2 cup salsa
- 1 tablespoon olive oil
- 10 corn tortillas
- 2.5 cups shredded Monterey Jack or Mexican cheese
Instructions
- Preheat your oven to 450°F.
- In a large bowl, mix shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder, and salsa until well coated.
- Brush one side of each tortilla with olive oil.
- On the un-oiled side, add 2 tablespoons of shredded cheese, followed by 1/4 cup of the chicken mixture, then top with 2 more tablespoons of cheese.
- Fold the tortilla over to form a taco shape and repeat with all tortillas.
- Arrange tacos in a single layer on a baking sheet.
- Bake for 16 minutes, flipping halfway through for even crispiness.
- Remove from oven and let rest for 3 minutes before serving.
