Description

Delicious and crispy baked tacos filled with flavorful shredded chicken and spices, perfect for family gatherings.


Ingredients

  • 2 1/2 cups shredded chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder (optional)
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 10 corn tortillas
  • 2.5 cups shredded Monterey Jack or Mexican cheese


Instructions

  1. Preheat your oven to 450°F.
  2. In a large bowl, mix shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder, and salsa until well coated.
  3. Brush one side of each tortilla with olive oil.
  4. On the un-oiled side, add 2 tablespoons of shredded cheese, followed by 1/4 cup of the chicken mixture, then top with 2 more tablespoons of cheese.
  5. Fold the tortilla over to form a taco shape and repeat with all tortillas.
  6. Arrange tacos in a single layer on a baking sheet.
  7. Bake for 16 minutes, flipping halfway through for even crispiness.
  8. Remove from oven and let rest for 3 minutes before serving.

Notes

For added flavor, consider incorporating diced vegetables or using different types of cheese.
