Ingredients

  • 4 large chicken breasts, boneless, skinless
  • 1 and 1/2 tbsp (20 ml) olive oil
  • 2 tsp (10 ml) garlic powder
  • 1 and 1/2 tsp (3 ml) chili powder
  • 1 and 1/4 tsp (1 ml) kosher salt
  • 1 tsp (5 ml) onion powder
  • 1 tsp (5 ml) ground cumin
  • 1/2 tsp (3 ml) smoked paprika
  • 1/2 tsp (3 ml) ground black pepper
  • 1/3 cup (110 g) maple syrup
  • 1 tbsp (15 g) beef mustard
  • 1 tbsp (15 g) yellow mustard
  • 1 tbsp (15 g) lemon juice
  • 1 tbsp (15 g) apple cider vinegar (or white vinegar or more lemon juice)


Instructions

  1. Set your oven to heat at 425°F (220°C). Prepare a baking tray by covering it with parchment paper and place it nearby.
  2. Prepare the seasoning blend. In a shallow dish, mix the olive oil with garlic powder, chili powder, kosher salt, onion powder, ground cumin, smoked paprika, and ground black pepper. Coat the chicken thoroughly with this mixture and lay it on the baking tray.
  3. Cook the chicken in the oven for 15 to 40 minutes, or until it’s completely done. The cooking duration might differ based on the chicken cut. It’s advisable to turn the chicken once during the baking process. Ensure the chicken’s internal temperature is 165°F (75°C) for safety. Mine reached this after 15 minutes total.
  4. Prepare the maple mustard glaze. In a separate small dish, combine maple syrup, beef mustard, yellow mustard, lemon juice, and apple cider vinegar. When the chicken is out of the oven, coat it with the glaze, then return it to the oven to bake or broil for an additional 1-2 minutes, depending on your preference for crispiness. Serve right away!

Notes

  • Marinate chicken in seasoning blend for at least 30 minutes before baking for enhanced flavor.
  • Adjust glaze sweetness by adding more or less maple syrup to suit your taste.
