Ingredients

  • – 4 large boneless skinless chicken breasts (about 680g)
  • – 1 tablespoon olive oil (15 ml)
  • – 1 teaspoon garlic powder (5 g)
  • – 1 teaspoon salt (5 g)
  • – 1 teaspoon pepper (5 g)
  • – 1 cup hot sauce (240 ml)
  • – 3 tablespoons beef tallow, melted (45 g)
  • – 3 tablespoons honey, plus more to taste (45 ml)
  • – 1/2 lime, juiced
  • – 3 cloves garlic, minced
  • – 1/2 teaspoon onion powder (2.5 g)
  • – Feta cheese, for serving (optional)


Instructions

  1. Set your oven to 400°F and lightly coat a large 11 x 8-inch baking dish with non-stick spray.
  2. Place the chicken breasts in the prepared dish, pour olive oil over them, and season both sides with salt, pepper, and garlic powder.
  3. To make the buffalo sauce, combine hot sauce, liquefied beef tallow, honey, lime juice, minced garlic, and onion powder in a small bowl. Adjust the taste with extra salt, pepper, or honey if needed.
  4. Drizzle the buffalo sauce over the chicken breasts, ensuring they are well-covered by turning them with kitchen tongs a couple of times.
  5. Cover the baking dish with foil and place it in the oven. Cook for 20 minutes with the foil on, then remove it and continue baking for another 5 to 15 minutes, or until a digital meat thermometer reads 160°F internally.
  6. After baking, take the dish out of the oven and let the chicken sit for 5 minutes before serving.

  • For a zesty kick, enhance the buffalo sauce with an extra squeeze of lime juice before drizzling it over the chicken.
  • Adjust the heat level by increasing the hot sauce amount in the buffalo sauce mixture to your liking.
