Ingredients
- – 4 large boneless skinless chicken breasts (about 680g)
- – 1 tablespoon olive oil (15 ml)
- – 1 teaspoon garlic powder (5 g)
- – 1 teaspoon salt (5 g)
- – 1 teaspoon pepper (5 g)
- – 1 cup hot sauce (240 ml)
- – 3 tablespoons beef tallow, melted (45 g)
- – 3 tablespoons honey, plus more to taste (45 ml)
- – 1/2 lime, juiced
- – 3 cloves garlic, minced
- – 1/2 teaspoon onion powder (2.5 g)
- – Feta cheese, for serving (optional)
Instructions
- Set your oven to 400°F and lightly coat a large 11 x 8-inch baking dish with non-stick spray.
- Place the chicken breasts in the prepared dish, pour olive oil over them, and season both sides with salt, pepper, and garlic powder.
- To make the buffalo sauce, combine hot sauce, liquefied beef tallow, honey, lime juice, minced garlic, and onion powder in a small bowl. Adjust the taste with extra salt, pepper, or honey if needed.
- Drizzle the buffalo sauce over the chicken breasts, ensuring they are well-covered by turning them with kitchen tongs a couple of times.
- Cover the baking dish with foil and place it in the oven. Cook for 20 minutes with the foil on, then remove it and continue baking for another 5 to 15 minutes, or until a digital meat thermometer reads 160°F internally.
- After baking, take the dish out of the oven and let the chicken sit for 5 minutes before serving.
