Ingredients
- 16 oz (454 g) pasta (uncooked, I used elbow macaroni)
- 3 tbsp (45 g) butter (unsalted)
- 1 chicken breast (cut into small pieces)
- 2 tbsp (16 g) all-purpose flour
- 1 cup (240 ml) heavy cream
- 3/4 cup (75 g) Parmesan cheese (grated)
- 1 cup (100 g) mozzarella cheese (shredded)
- salt and pepper to taste
- parsley (for garnish)
Instructions
- Prepare the pasta: Preheat your broiler. Follow the instructions on the package to cook the pasta.
- Cook the chicken: In a large frying pan, melt 1 tablespoon of butter. Add the chicken pieces and cook them until they are no longer pink and start to brown slightly. Take the chicken out of the pan.
- Prepare the sauce: Using the same pan, melt the rest of the butter. Pour in the heavy cream and whisk it together. Add the flour and keep whisking until the mixture becomes thick. Season with salt and pepper, then mix in the Parmesan cheese while continuing to whisk. If the sauce becomes too thick, use a bit of the pasta water to thin it out. Mix the chicken and pasta back into the pan and stir well.
- Complete the dish: Sprinkle mozzarella cheese on top and place it under the broiler for around 5 minutes until the cheese is bubbly and turns golden brown. Keep an eye on it to prevent burning.
- Garnish and serve: Add parsley as a garnish and sprinkle more Parmesan cheese if desired before serving.
