Description

A classic chicken broccoli casserole that combines tender chicken, vibrant broccoli, creamy sauce, and a cheesy topping, creating a comforting and satisfying dish.


Ingredients

  • 3 cups boneless, skinless chicken breasts, cooked and diced
  • 2 packages (10 ounces each) frozen broccoli cuts, cooked and drained
  • 2 cans (10-3/4 ounces each) 98% fat-free cream of chicken soup
  • 3/4 cup non-fat evaporated milk
  • 1 teaspoon lemon juice
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup Italian-flavored dry bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • Cooking spray


Instructions

  1. Combine the cooked chicken and broccoli in a large bowl.
  2. Blend the cream of chicken soup, evaporated milk, and lemon juice in a smaller bowl until smooth.
  3. Add the soup mixture to the bowl with chicken and broccoli, stirring until well incorporated.
  4. Pour the combined mixture into a greased 9×13-inch baking dish, spreading it evenly.
  5. Sprinkle the shredded cheddar cheese over the top of the casserole.
  6. Combine the Italian bread crumbs and grated Parmesan in a separate bowl, then sprinkle this mixture evenly over the cheese layer.
  7. Spray the top lightly with cooking spray to enhance browning.
  8. Bake, uncovered, at 350°F for 25 to 30 minutes, or until bubbly.
