Description

A delightful Korean dish featuring marinated chicken thighs cooked to perfection, blending savory and sweet flavors.


Ingredients

  • 8 boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, sliced
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp mirin
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp avocado oil
  • 1 garlic clove, minced
  • ½ inch ginger, grated
  • 1 tbsp gochujang paste (omit if you prefer a milder flavor)


Instructions

  1. Mix the soy sauce, brown sugar, mirin, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang paste (if using) in a bowl to create a flavorful marinade.
  2. Add the chicken pieces to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes; longer is better for maximum flavor.
  3. Heat the avocado oil in a large skillet over medium-high heat. Add the marinated chicken (juice and all) and sliced onion.
  4. Pan fry for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and has a lovely caramelized exterior. The onions should be soft and slightly charred.
  5. Serve warm and enjoy this delightful dish!
