A delightful Korean dish featuring marinated chicken thighs cooked to perfection, blending savory and sweet flavors.
Ingredients
- 8 boneless skinless chicken thighs, cut into bite-sized pieces
- 1 onion, sliced
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp mirin
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp avocado oil
- 1 garlic clove, minced
- ½ inch ginger, grated
- 1 tbsp gochujang paste (omit if you prefer a milder flavor)
Instructions
- Mix the soy sauce, brown sugar, mirin, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang paste (if using) in a bowl to create a flavorful marinade.
- Add the chicken pieces to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes; longer is better for maximum flavor.
- Heat the avocado oil in a large skillet over medium-high heat. Add the marinated chicken (juice and all) and sliced onion.
- Pan fry for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and has a lovely caramelized exterior. The onions should be soft and slightly charred.
