Ingredients
- 2 cups shredded rotisserie chicken
- 1 package (about 16 oz) store-bought gnocchi
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach (optional)
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent, approximately 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring it to a simmer.
- Add in the shredded rotisserie chicken and gnocchi, cooking according to the gnocchi package instructions, usually about 3-5 minutes.
- Stir in the heavy cream and season with salt and pepper.
- If using spinach, add it and cook until wilted.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
Feel free to add other vegetables like carrots or celery for extra flavor. Adjust the thickness of the soup by varying the amount of heavy cream used.
