Ingredients
- 1 package refrigerated biscuits (8 biscuits)
- 3 tbsp vegetable oil (45ml)
- 1/2 cup (120 ml) finely chopped onion (1/2 medium onion)
- 2 teaspoons (10 ml) minced garlic (2 cloves)
- 1/3 cup all-purpose flour (40g)
- 2 3/4 cups chicken broth (650ml)
- 1/2 cup whole milk (120ml)
- 1/2 tsp (3 ml) salt
- 1/4 tsp (1 ml) black pepper
- 4 cups (960 ml) shredded or chopped cooked chicken breast
- 10 ounce (283 g) package frozen mixed vegetables (thawed)
Instructions
- Prepare the biscuits as directed on their packaging.
- Place a large skillet on medium heat, and pour in the vegetable oil, allowing it to heat up.
- Add the chopped onion and minced garlic to the skillet, stirring often, and cook until the onion becomes tender, approximately 5 minutes.
- Incorporate the flour into the mixture and continue stirring for about 3 minutes, until it turns a light golden hue.
- Gradually add the chicken broth and whole milk, whisking continuously. Let the mixture simmer and cook until it thickens to the point where it coats a spoon, which should take about 5 to 8 minutes. Season with salt and black pepper.
- Mix in the cooked chicken and the thawed mixed vegetables. Allow everything to simmer until the chicken and vegetables are thoroughly heated, roughly 5 minutes.
Notes
- Consider using half-and-half or heavy cream for a creamier texture.
- Try homemade or low-sodium chicken broth for added flavor.
- Enhance the dish with your favorite herbs or spices like thyme or paprika.
