Ingredients

  • 1 package refrigerated biscuits (8 biscuits)
  • 3 tbsp vegetable oil (45ml)
  • 1/2 cup (120 ml) finely chopped onion (1/2 medium onion)
  • 2 teaspoons (10 ml) minced garlic (2 cloves)
  • 1/3 cup all-purpose flour (40g)
  • 2 3/4 cups chicken broth (650ml)
  • 1/2 cup whole milk (120ml)
  • 1/2 tsp (3 ml) salt
  • 1/4 tsp (1 ml) black pepper
  • 4 cups (960 ml) shredded or chopped cooked chicken breast
  • 10 ounce (283 g) package frozen mixed vegetables (thawed)

Instructions

  1. Prepare the biscuits as directed on their packaging.
  2. Place a large skillet on medium heat, and pour in the vegetable oil, allowing it to heat up.
  3. Add the chopped onion and minced garlic to the skillet, stirring often, and cook until the onion becomes tender, approximately 5 minutes.
  4. Incorporate the flour into the mixture and continue stirring for about 3 minutes, until it turns a light golden hue.
  5. Gradually add the chicken broth and whole milk, whisking continuously. Let the mixture simmer and cook until it thickens to the point where it coats a spoon, which should take about 5 to 8 minutes. Season with salt and black pepper.
  6. Mix in the cooked chicken and the thawed mixed vegetables. Allow everything to simmer until the chicken and vegetables are thoroughly heated, roughly 5 minutes.

Notes

  • Consider using half-and-half or heavy cream for a creamier texture.
  • Try homemade or low-sodium chicken broth for added flavor.
  • Enhance the dish with your favorite herbs or spices like thyme or paprika.
