Ingredients
- 3 boneless chicken breasts (diced into 1 inch pieces)
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) pepper
- 2 tbsp (30 ml) olive oil (divided )
- 2 cup (480 ml) s broccoli florets (diced into bite size pieces)
- 1/2 Yellow Bell Pepper (cut into 1 inch pieces)
- 1/2 red bell pepper (cut into 1 inch pieces)
- 1/2 cup (120 ml) carrots (shredded)
- 1/2 tsp (3 ml) ground ginger
- 2 tsp (10 ml) minced garlic
- 2 tbsp (30 ml) sesame seeds
- 1 tbsp (15 ml) cornstarch
- 1/4 cup (60 ml) chicken broth
- 1/4 cup (60 ml) soy sauce
- 2 tbsp (30 ml) honey
Instructions
- In a small mixing bowl, combine the cornstarch, chicken broth, soy sauce, and honey. Set aside once mixed.
- Add 1 tablespoon of olive oil to a large pan on medium-high heat. Introduce the chicken pieces, season with salt and pepper, and cook for 3-5 minutes until browned and fully cooked. Transfer the chicken to a separate dish.
- Lower the heat to medium and pour the remaining olive oil into the same pan. Add the broccoli, bell peppers, and carrots. Stir occasionally and cook until the vegetables are tender yet still crisp.
- Incorporate the ground ginger and minced garlic, cooking for 1-2 minutes until the garlic releases its aroma.
- Return the chicken to the pan. Pour in the prepared stir fry sauce, ensuring the chicken and vegetables are well-coated. Allow the mixture to reach a boil, stirring occasionally, and let it boil for 1 minute to allow the sauce to thicken.
- Sprinkle sesame seeds on top, serve as is or with rice, and enjoy your meal!
