Description
A quick and colorful chicken stir fry featuring tender chicken, vibrant vegetables, and savory soy sauce for a delicious weeknight meal.
Ingredients
- 1 lb chicken tenders
- 1 head of broccoli
- 2 bell peppers
- 1 yellow onion
- 1/4 cup + 2 tbsp soy sauce
- 3 tbsp olive oil
- 2 1/2 tbsp honey
- 1 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- Salt and pepper to taste
Instructions
- Chop your broccoli, bell peppers, and onion as described.
- Cut the chicken tenders into strips.
- Heat 1 tbsp of olive oil in a pan over medium heat.
- Add the chicken, seasoning with salt and pepper. Cook until browned and cooked through. Remove from heat.
- In the same pan, add an additional 2 tbsp of olive oil. Then toss in the broccoli, sliced peppers, onion, garlic powder, and ground ginger. Add a pinch of pepper.
- Sauté for about 10 minutes, or until the vegetables soften.
- Reduce heat and stir in the soy sauce and honey. Let simmer for a few minutes.
- Return the cooked chicken to the pan. Mix well and simmer for another 5 minutes, allowing the flavors to meld. Adjust salt and pepper to taste.
- Serve over rice for an even heartier meal and relish the flavors crafted in each bite.
Notes
For a spicy kick, consider garnishing with fresh herbs or adding crushed red pepper.
