Ingredients

  • 1 yellow onion (150g)
  • 4 cloves garlic (12g)
  • 1 jalapeño (30g)
  • 1 Tbsp olive oil (15 ml)
  • 5 lbs. boneless, skinless chicken thighs* (680g)
  • 2 15 oz. cans cannellini beans (drained) (425g)
  • 1 15 oz. can pinto beans (drained) (425g)
  • 1 7 oz. can diced green chiles (200g)
  • 1 Tbsp ground cumin (15g)
  • 1 tsp dried oregano (5g)
  • 1/4 tsp smoked paprika (1g)
  • 1/4 tsp cayenne pepper (1g)
  • 1/4 tsp garlic powder (1g)
  • 1/4 tsp freshly cracked black pepper (1g)
  • 3 cups chicken broth (720 ml)
  • 1 cup frozen corn (150g)
  • 4 oz. beef cream cheese (113g)
  • 1/2 cup dairy sour cream (120 ml)


Instructions

  1. Chop the onion into small pieces and finely chop the garlic. Remove the seeds from the jalapeño and chop it into small pieces. Put the onion, garlic, and jalapeño in a large pot with the olive oil. Cook over medium heat until the onion is tender.
  2. Add the chicken thighs, both types of beans, diced green chiles, cumin, oregano, smoked paprika, cayenne, garlic powder, black pepper, and chicken broth into the pot. Mix everything well.
  3. Cover the pot with a lid and increase the heat to medium-high. Let the mixture reach a boil. Once it boils, reduce the heat to medium-low and let it simmer for 30 minutes, stirring from time to time.
  4. After 30 minutes, take out the chicken thighs and use two forks to shred them. Return the shredded chicken to the pot and add the corn. Mix everything together and let it heat up.
  5. Cut the cream cheese into pieces and mix it into the chili until it melts completely. Then, stir in the sour cream. To make the chili thicker, mash some of the beans against the side of the pot.
  6. Taste the chili and adjust the flavors to your preference. Serve it hot with your favorite toppings!

  • For a healthier option, use boneless, skinless chicken breasts instead of thighs.
