Ingredients

  • – 500 g (1 lb) zucchini (2 medium ~ 23 cm/9″ long)
  • – 1 tsp (5 ml) salt
  • – 1 large egg
  • – 2 green onions, halved then finely sliced
  • – 1/4 cup (60 ml) grated cheese (fresh or store bought)
  • – 1 garlic clove, large, minced
  • – 1/2 cup (75 g) flour
  • – 1/2 tsp (3 ml) baking powder
  • – Pinch of pepper
  • – 4 tbsp (60 ml) vegetable oil, separated
  • – Yoghurt or sour cream
  • – More chopped green onions


Instructions

  1. Shred the zucchini using a box grater, angling it to create long strands.
  2. Place the shredded zucchini in a bowl and sprinkle with salt, then mix and let it sit for at least 10 minutes.
  3. Using your hands or a tea towel, squeeze out the excess liquid and return the zucchini to the bowl.
  4. Set your oven to 200°F (100°C) to keep the fritters warm later. Arrange a rack on a tray to help maintain crispiness.
  5. Into the zucchini bowl, add the egg, sliced green onions, grated cheese, and minced garlic, then stir everything together.
  6. Evenly sprinkle flour and baking powder over the mixture, along with a dash of pepper, and mix until just combined, aiming for a thick yet soft batter.
  7. Warm 2 tablespoons of oil in a non-stick skillet over medium-high heat (or medium if your stove is particularly powerful). Scoop out 1/4 cup portions of the batter into the pan, doing 3 or 4 at a time.
  8. Gently press down with a spatula to flatten each portion to about 1 cm (approximately 4/5 inch) thick.
  9. Cook each side for 3 minutes until a deep golden color is achieved on the underside, adjusting the heat if it’s browning too fast. Flip and repeat for the other side. Move them to the tray and place in the oven to keep warm.
  10. Continue with the remaining batter in the same manner.
  11. Serve right away with a generous spoonful of yogurt or sour cream and a sprinkle of additional chopped green onions if preferred.
