A comforting and easy beef stew made in a crock pot, combining tender beef and hearty vegetables in a savory broth.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 bay leaves
Instructions
- Add the beef, carrots, potatoes, onion, and garlic to the crock pot.
- Pour in the beef broth and add Worcestershire sauce, salt, pepper, thyme, and bay leaves. Stir to combine.
- Cover the crock pot and cook on low for 6-8 hours or on high for 4-5 hours.
- Before serving, remove bay leaves and adjust seasoning if necessary.
Notes
For a thicker stew, add a cornstarch slurry during the last 30 minutes of cooking. Browning the beef before adding it to the pot can enhance flavor.
