Description

A comforting and easy beef stew made in a crock pot, combining tender beef and hearty vegetables in a savory broth.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves


Instructions

  1. Add the beef, carrots, potatoes, onion, and garlic to the crock pot.
  2. Pour in the beef broth and add Worcestershire sauce, salt, pepper, thyme, and bay leaves. Stir to combine.
  3. Cover the crock pot and cook on low for 6-8 hours or on high for 4-5 hours.
  4. Before serving, remove bay leaves and adjust seasoning if necessary.

Notes

For a thicker stew, add a cornstarch slurry during the last 30 minutes of cooking. Browning the beef before adding it to the pot can enhance flavor.
