Description

A comforting and flavorful white chicken chili made in a slow cooker, featuring tender shredded chicken, hearty beans, and zesty tomatoes.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream (optional for serving)
  • Chopped cilantro (optional for garnish)


Instructions

  1. In a crockpot, add the cooked shredded chicken, white beans, corn, diced tomatoes, onion, and garlic.
  2. Pour in the chicken broth and season with cumin, chili powder, salt, and pepper.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, stir in the sour cream if using.
  6. Serve hot, garnished with chopped cilantro.

Notes

For added flavor, consider browning the onions and garlic before adding them to the crockpot. Adjust the seasonings to your taste preference.
