A comforting and flavorful white chicken chili made in a slow cooker, featuring tender shredded chicken, hearty beans, and zesty tomatoes.
Ingredients
- 2 cups cooked shredded chicken
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream (optional for serving)
- Chopped cilantro (optional for garnish)
Instructions
- In a crockpot, add the cooked shredded chicken, white beans, corn, diced tomatoes, onion, and garlic.
- Pour in the chicken broth and season with cumin, chili powder, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the sour cream if using.
- Serve hot, garnished with chopped cilantro.
