Ingredients

  • 2 lbs (900 g) chicken wings (drumettes and flats separated, tips removed)
  • 2 tsp aluminum-free baking powder
  • 2 tsp kosher salt
  • 1 tsp onion powder
  • ½ tsp ground black pepper
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes (optional, for added heat)
  • ½ stick (57 g) unsalted butter
  • 2 Tbsp minced garlic
  • 2 Tbsp chopped fresh parsley


Instructions

  1. Preheat your oven to 425°F (220°C) and line your half-sheet baking pan with parchment paper.
  2. Pat the chicken wings dry with paper towels, ensuring you remove any excess moisture for a crispy end result.
  3. In a large bowl, toss the chicken wings with baking powder, kosher salt, onion powder, black pepper, smoked paprika, and red pepper flakes if you choose to add some heat.
  4. Arrange the wings on the prepared sheet pan, leaving space between each piece for even cooking.
  5. Bake the wings for 30 minutes, then flip them and bake for an additional 10 minutes or until they turn a beautiful golden color.
  6. While the wings bake, prepare the garlic butter sauce by melting the unsalted butter in a small saucepan. Add minced garlic and chopped parsley; stir until well combined.
  7. Once the wings are done, place them in a large bowl and toss with the garlic butter sauce until every wing is evenly coated. Serve immediately.

Notes

For extra flavor, consider marinating the wings in the dry seasoning for a couple of hours before cooking. Serve with dipping sauces like ranch or blue cheese.
