Description

Learn how to make a delicious Easy Garlic Dijon Chicken recipe that is sure to impress your family and friends. Simple, flavorful, and perfect for any occasion!

Ingredients

  • – 1 1/2 pounds (680 g) boneless, skinless chicken thighs
  • – Salt
  • – Ground black pepper
  • – 1 large yellow onion, roughly chopped
  • – Fresh parsley, chopped
  • – 3 teaspoons (15 ml) Dijon mustard
  • – 2 teaspoons (10 ml) honey
  • – 1/3 cup (80 ml) vegetable oil
  • – 6 garlic cloves, minced
  • – 1 teaspoon (5 ml) ground coriander
  • – 3/4 teaspoon (4 ml) paprika
  • – 1/2 teaspoon (3 ml) black pepper
  • – Pinch of salt

Instructions

  1. Prepare the oven by setting the temperature to 425°F.
  2. Remove the chicken from the refrigerator, pat it dry, and sprinkle both sides with salt and pepper. Let it rest briefly while you prepare the sauce.
  3. Create the Garlic Dijon mixture by stirring together Dijon mustard, honey, vegetable oil, garlic, spices, and a dash of salt in a large bowl.
  4. Immerse the chicken in the sauce, a few pieces at a time, using tongs to ensure each piece is well-coated. Transfer the coated chicken to a large, lightly-oiled cast iron skillet or baking sheet. Pour any leftover sauce over the top and add the chopped onions.
  5. Place the skillet in the oven and cook until the chicken thighs reach an internal temperature of 165°F, which should take about 25 to 30 minutes.
  6. Take the skillet out of the oven and sprinkle with fresh parsley before serving.

Notes

  • Marinate the chicken thighs in the Garlic Dijon mixture for 1-2 hours before cooking for a more robust flavor.
  • Evenly spread the chopped onions over the chicken to enhance sweetness and flavor.
  • Adjust the sauce seasoning by adding more honey for sweetness or more Dijon mustard for tanginess based on your taste preference.
