Ingredients

- – 2 teaspoons (10 ml) honey
- – 1/3 cup (80 ml) vegetable oil
- – 6 garlic cloves, minced
- – 1 teaspoon (5 ml) ground coriander
- – 3/4 teaspoon (4 ml) paprika
- – 1/2 teaspoon (3 ml) black pepper
- – Pinch of salt
Instructions
- Prepare the oven by setting the temperature to 425°F.
- Remove the chicken from the refrigerator, pat it dry, and sprinkle both sides with salt and pepper. Let it rest briefly while you prepare the sauce.
- Create the Garlic Dijon mixture by stirring together Dijon mustard, honey, vegetable oil, garlic, spices, and a dash of salt in a large bowl.
- Immerse the chicken in the sauce, a few pieces at a time, using tongs to ensure each piece is well-coated. Transfer the coated chicken to a large, lightly-oiled cast iron skillet or baking sheet. Pour any leftover sauce over the top and add the chopped onions.
- Place the skillet in the oven and cook until the chicken thighs reach an internal temperature of 165°F, which should take about 25 to 30 minutes.
- Take the skillet out of the oven and sprinkle with fresh parsley before serving.
