Description
A simple yet flavorful marinade that transforms chicken into a juicy, Mediterranean-inspired dish.
Ingredients
- 2 lbs chicken (thighs, breasts, or drumsticks)
- 2 tbsp Greek yogurt
- 1 tbsp olive oil
- Zest + juice of 1 lemon
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Combine the Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, garlic powder, salt, and pepper in a small bowl or mason jar.
- Whisk or shake well until all the ingredients are thoroughly blended.
- Place the chicken in a large zip-top bag or shallow dish.
- Pour the marinade over the chicken, seal the bag or cover the dish, and give it a gentle massage.
- Refrigerate for at least 30 minutes or up to 24 hours for maximum flavor.
- Remove the chicken from the marinade and proceed to grill, bake, or sauté until cooked through and golden.
Notes
For added heat, consider adding red pepper flakes or cayenne pepper to the marinade.
