Description
Flavorful grilled chicken skewers marinated in Thai-inspired sauces, served with a creamy peanut sauce for dipping.
Ingredients
- 1 lb chicken breast, cut into cubes
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon lime juice
- 1 teaspoon chili paste (optional)
- Skewers (soaked in water if wooden)
- For Peanut Sauce:
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- Water to thin (as needed)
Instructions
- Mix soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, and chili paste (if using) in a bowl.
- Add chicken cubes to the marinade and let sit for at least 30 minutes.
- Prepare the peanut sauce by combining peanut butter, soy sauce, lime juice, honey, and enough water to reach desired consistency.
- Preheat the grill to medium-high heat.
- Thread marinated chicken onto skewers, leaving space between each piece.
- Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through.
- Serve warm with peanut sauce on top or on the side for dipping.
Notes
Let skewers rest for a few minutes after grilling for juicy chicken. Experiment with the marinade by adding your favorite herbs.
