Description

Flavorful grilled chicken skewers marinated in Thai-inspired sauces, served with a creamy peanut sauce for dipping.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon lime juice
  • 1 teaspoon chili paste (optional)
  • Skewers (soaked in water if wooden)
  • For Peanut Sauce:
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • Water to thin (as needed)


Instructions

  1. Mix soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, and chili paste (if using) in a bowl.
  2. Add chicken cubes to the marinade and let sit for at least 30 minutes.
  3. Prepare the peanut sauce by combining peanut butter, soy sauce, lime juice, honey, and enough water to reach desired consistency.
  4. Preheat the grill to medium-high heat.
  5. Thread marinated chicken onto skewers, leaving space between each piece.
  6. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through.
  7. Serve warm with peanut sauce on top or on the side for dipping.

Notes

Let skewers rest for a few minutes after grilling for juicy chicken. Experiment with the marinade by adding your favorite herbs.
