Ingredients

  • – 12 oz (340 g) uncooked pasta, use brown rice or quinoa pasta for gluten-free
  • – 6 1/2 cups (1.5 L) fresh broccoli florets, no stems
  • – 5 cloves garlic, smashed and chopped
  • – 1/4 cup (60 ml) grated Parmesan or Romano cheese
  • – 2 tbsp (30 ml) olive oil, divided
  • – kosher salt and fresh cracked pepper


Instructions

  1. Heat a generous amount of salted water in a large pot until it starts to boil.
  2. Once boiling, add both the pasta and broccoli, cooking them together until the pasta reaches an al dente texture as per package directions.
  3. Before draining, save approximately one cup of the cooking water, then strain the pasta and broccoli.
  4. Place the pot back on the stove, turn the heat to high, and pour in a tablespoon of olive oil; when hot, add the garlic and cook until it turns a golden color.
  5. Lower the heat and return the pasta mixture to the pot, stirring thoroughly.
  6. Pour in the remaining olive oil, sprinkle in the grated cheese, and season with salt and pepper, mixing well and breaking any large broccoli pieces into smaller bits.
  7. Stir in half a cup of the reserved cooking liquid, adding more if necessary to achieve your desired consistency.
  8. Dish up in pasta bowls and serve with extra grated cheese on the side for garnish.

Notes

  • Substitute nutritional yeast for Parmesan or Romano cheese for a dairy-free option.
  • Sprinkle red pepper flakes or a squeeze of lemon juice before serving for added flavor.
