Ingredients
- – 12 oz (340 g) uncooked pasta, use brown rice or quinoa pasta for gluten-free
- – 6 1/2 cups (1.5 L) fresh broccoli florets, no stems
- – 5 cloves garlic, smashed and chopped
- – 1/4 cup (60 ml) grated Parmesan or Romano cheese
- – 2 tbsp (30 ml) olive oil, divided
- – kosher salt and fresh cracked pepper
Instructions
- Heat a generous amount of salted water in a large pot until it starts to boil.
- Once boiling, add both the pasta and broccoli, cooking them together until the pasta reaches an al dente texture as per package directions.
- Before draining, save approximately one cup of the cooking water, then strain the pasta and broccoli.
- Place the pot back on the stove, turn the heat to high, and pour in a tablespoon of olive oil; when hot, add the garlic and cook until it turns a golden color.
- Lower the heat and return the pasta mixture to the pot, stirring thoroughly.
- Pour in the remaining olive oil, sprinkle in the grated cheese, and season with salt and pepper, mixing well and breaking any large broccoli pieces into smaller bits.
- Stir in half a cup of the reserved cooking liquid, adding more if necessary to achieve your desired consistency.
- Dish up in pasta bowls and serve with extra grated cheese on the side for garnish.

- Substitute nutritional yeast for Parmesan or Romano cheese for a dairy-free option.
- Sprinkle red pepper flakes or a squeeze of lemon juice before serving for added flavor.
