Description

A comforting homemade chicken soup filled with poached chicken, mixed vegetables, and aromatic herbs.


Ingredients

  • 2 poached chicken breasts, shredded
  • 4 cups chicken broth
  • 2 cups mixed winter vegetables (carrots, celery, and potatoes)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or cilantro)


Instructions

  1. Heat a little oil in a large pot over medium heat and sauté the onion and garlic until fragrant.
  2. Add the mixed vegetables and cook for another 5 minutes.
  3. Pour in the chicken broth, add the shredded chicken, thyme, rosemary, and season with salt and pepper.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes until the vegetables are tender.
  5. Serve hot, garnished with fresh herbs.

Notes

Taste as you go and adjust seasoning as necessary. For added brightness, squeeze a bit of lemon juice before serving.
