Description
A comforting homemade chicken soup filled with poached chicken, mixed vegetables, and aromatic herbs.
Ingredients
- 2 poached chicken breasts, shredded
- 4 cups chicken broth
- 2 cups mixed winter vegetables (carrots, celery, and potatoes)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- Heat a little oil in a large pot over medium heat and sauté the onion and garlic until fragrant.
- Add the mixed vegetables and cook for another 5 minutes.
- Pour in the chicken broth, add the shredded chicken, thyme, rosemary, and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes until the vegetables are tender.
- Serve hot, garnished with fresh herbs.
Notes
Taste as you go and adjust seasoning as necessary. For added brightness, squeeze a bit of lemon juice before serving.
