Ingredients
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese (optional) for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant.
- Add the diced chicken breast and cook until browned and cooked through.
- Stir in the orzo pasta and add chicken broth. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the orzo is al dente.
- Add spinach and cherry tomatoes. Cook for an additional 2-3 minutes until spinach is wilted.
- Season with salt and pepper.
