Description

A delicious and satisfying high protein feta chicken salad that combines tender shredded chicken with creamy feta and fresh vegetables.


Ingredients

  • 3 cups cooked shredded chicken
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/3 cup chopped pepperoncinis
  • 1/3 cup chopped roasted red peppers
  • 1/4 cup mayo
  • 1/3 cup plain non-fat Greek yogurt
  • 1 tbsp hot honey
  • 1 tbsp pepperoncini juice
  • 1 tbsp chopped fresh dill
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 6 oz crumbled feta


Instructions

  1. Combine all the prepared ingredients in a large bowl.
  2. Start by adding the shredded chicken as the base, followed by the diced celery and red onion.
  3. Next, toss in the chopped pepperoncinis and roasted red peppers.
  4. Mix in both the mayo and Greek yogurt.
  5. Drizzle in the hot honey and pepperoncini juice.
  6. Add the dill, oregano, garlic powder, and salt.
  7. Fold in the crumbled feta.
  8. Mix everything together until well combined.
  9. Serve this salad on its own or as a filling in a wrap or sandwich.

Notes
