Ingredients
- 3 cups cooked shredded chicken
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/3 cup chopped pepperoncinis
- 1/3 cup chopped roasted red peppers
- 1/4 cup mayo
- 1/3 cup plain non-fat Greek yogurt
- 1 tbsp hot honey
- 1 tbsp pepperoncini juice
- 1 tbsp chopped fresh dill
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 6 oz crumbled feta
Instructions
- Combine all the prepared ingredients in a large bowl.
- Start by adding the shredded chicken as the base, followed by the diced celery and red onion.
- Next, toss in the chopped pepperoncinis and roasted red peppers.
- Mix in both the mayo and Greek yogurt.
- Drizzle in the hot honey and pepperoncini juice.
- Add the dill, oregano, garlic powder, and salt.
- Fold in the crumbled feta.
- Mix everything together until well combined.
- Serve this salad on its own or as a filling in a wrap or sandwich.
Notes
For added flavor, consider using fresh herbs and adjust the yogurt and mayo to your preferred creaminess level.
