Ingredients

  • 2 boneless skinless chicken breasts (about 590 g total) ($6.79)

  • 1 tbsp cooking oil (15 ml) ($0.04)
  • 1 clove garlic, minced ($0.08)
  • 120 ml chicken broth (1/2 cup) ($0.07)
  • 1 tbsp vegetable oil (14 g) ($0.14)
  • 5 ml lemon juice (1 tsp) ($0.02)
  • 1 tbsp chopped fresh parsley (optional) (2 g) ($0.10)
  • 5 ml freshly cracked black pepper (1/8 tsp) ($0.02)


Instructions

  1. With a sharp blade, slice the chicken breasts into two thinner sections or opt for pre-sliced thin-cut chicken breasts.
  2. In a bowl, mix the flour with the lemon pepper seasoning. Coat both sides of the chicken pieces with this mixture and rub it in until thoroughly covered.
  3. Warm the cooking oil in a large frying pan over medium heat. Once the oil is hot, place the chicken in the pan and cook each side until they achieve a golden-brown color, approximately 5 minutes per side. Transfer the chicken to a clean plate and cover it to maintain warmth.
  4. Introduce the butter and minced garlic to the same pan and sauté for around one minute.
  5. Pour the chicken broth into the pan, stirring to incorporate any bits stuck to the bottom. Add the lemon juice and let the sauce simmer for 3-5 minutes until it slightly thickens. Taste and adjust the salt if necessary (I found no need to add any).
  6. Lastly, put the chicken back into the pan and drizzle the sauce over it. Allow the chicken to warm through. Sprinkle a touch of freshly cracked black pepper and optionally garnish with chopped fresh parsley before serving.
