Ingredients
- 1 teaspoon olive oil
- 1 medium onion, thinly sliced
- 5 boneless, skinless chicken thighs
- â…“ cup low-carb BBQ sauce
- ½ cup shredded cheese (cheddar, mozzarella, or Colby Jack)
- Salt and pepper to taste
Instructions
- Heat the olive oil in a medium skillet over medium heat.
- Add the thinly sliced onions into the skillet. Cook for about 3-4 minutes, stirring occasionally, until softened.
- Season the chicken thighs with salt and pepper. Place them in the skillet with the onions and cover the pan.
- Cook over medium-low heat for about 2-3 minutes. Then remove the lid and continue cooking, flipping occasionally, until browned and reaches an internal temperature of 165°F, about 10 minutes.
- Shred the chicken directly in the pan using two forks. Pour in the low-carb BBQ sauce and stir until well coated.
- Cook for an additional 1-2 minutes to blend flavors.
- Sprinkle the shredded cheese over the chicken mixture. Cover and let sit for about 1-2 minutes until melted.
- Remove from heat and serve immediately.
