Description

Ingredients

  • 1 teaspoon olive oil
  • 1 medium onion, thinly sliced
  • 5 boneless, skinless chicken thighs
  • â…“ cup low-carb BBQ sauce
  • ½ cup shredded cheese (cheddar, mozzarella, or Colby Jack)
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the thinly sliced onions into the skillet. Cook for about 3-4 minutes, stirring occasionally, until softened.
  3. Season the chicken thighs with salt and pepper. Place them in the skillet with the onions and cover the pan.
  4. Cook over medium-low heat for about 2-3 minutes. Then remove the lid and continue cooking, flipping occasionally, until browned and reaches an internal temperature of 165°F, about 10 minutes.
  5. Shred the chicken directly in the pan using two forks. Pour in the low-carb BBQ sauce and stir until well coated.
  6. Cook for an additional 1-2 minutes to blend flavors.
  7. Sprinkle the shredded cheese over the chicken mixture. Cover and let sit for about 1-2 minutes until melted.
  8. Remove from heat and serve immediately.
